What is BISCOTTI ??


  




"Biscotti" is the plural form of biscotto. The word originates from the medieval Latin word biscoctus, meaning "twice-cooked." It defined oven baked goods that were baked twice, so they were very dry and could be stored for long periods of time. Such nonperishable food was particularly useful during journeys and wars, and twice baked breads were a staple food of the Roman Legions.(Wikipedia)

When you browse for biscotti recipe you will find many varieties (chocolate, vanilla, green tea, with different kind nuts, chocolate chips or dry fruit) but in general you will find 2 type of biscotti. One is biscotti that has no oil/butter/margarine, this type is the original Italian recipe. The other is biscotti with butter/oil/margarine that usually comes from American recipe. But no matter what the variation are, biscotti always have unique thick oval shape. Because biscotti is thick and quite hard, people usually dunk it to liquid to softened it, that is why biscotti is a perfect cookie for coffee.

Sebagai yang mengaku penggemar coklat, wajib coba cake coklat ini. Ada yang menyebut cake ini dengan molten chocolate cake, chocolate fondant atau chocolate lava cake. Ciri khas cake ini yaitu apabila di belah bagian tengahnya akan keluar coklat yang mengalir dari dalam cakenya. Jadi cake ini dipanggang setengah matang, tidak sampai mengeras atau matang sempurna. Untuk mendapatkan cake yang melted sewaktu dibelah, kesulitannya ada pada proses memanggangnya. Tapi dibilang sulit juga nggak, intinya apabila pinggiran cake dicetakan sudah mulai mengering dan bagian tengah masih basah dan goyang apabila digerakan itu tandanya cake siap untuk di angkat. Waktu memanggangnya tergantung ukuran mold atau cetakan yang dipakai dan panas oven yang berbeda-beda. Semakin besar cetakan waktu memanggang akan lebih lama, jadi perhatikan saja apakah pinggiran cakenya sudah melepas dari cetakannya tapi bagian tengah masih basah.

Molten chocolate cake or lava cake is a popular dessert that combines the elements of a flourless chocolate cake (sometimes called a chocolate decadence cake) and a soufflé. Some other names used are chocolate fondant, chocolate moelleux andchocolate lava cake.

The United States-based chef Jean-Georges Vongerichten claims to have invented molten chocolate cake in New York City in 1987, but the French chef and chocolatier Jacques Torres has disputed that claim, arguing that such a dish already existed in France. According to Vongerichten, he pulled a chocolate sponge cake from the oven before it was done and found that the center was still runny, but was warm and had both a good taste and a good texture. There are two types of lava cake based on the way you cook it The first is the one that only consist of one batter, you make a chocolate batter, pour it on a mold, bake it on high temperature oven in a short time, so the outer of your cake is set and the center is not. The other is the one that consist of two batters, cake batter and filling, this usually more stable and have some varieties.

Malka Lava Cake takes the second way to prepare. They're consist of two batters, cake batter and filling. We have two cakes combination. The chocolate white lava cake is consist of chocolate cake with white chocolate filling. The two type of chocolate balancing the flavor beautifully, its chocolaty and not too sweet. Another combination is banana chocolate lava cake, light fluffy and moist banana cake with a goey chocolate filling.
